pecans/walnuts - whatever kind you like ..&lt;br /&gt;
brown sugar ..&lt;br /&gt;
vanilla cake mix - used a yellow cake mix ..&lt;br /&gt;
3 large eggs beaten ..&lt;br /&gt;
1 - 29 oz can sweet potato pie filling - Bruce's has all the spices in it ..&lt;br /&gt;
grease a 13x9 pan with butter ..&lt;br /&gt;
sprinkle nuts over that, then top with brown sugar ..&lt;br /&gt;
really think the amount stated to use would be too sweet ..&lt;br /&gt;
just put what you think is okay for you ..&lt;br /&gt;
&lt;br /&gt;
in a large mixing bowl, blend cake mix - eggs - sweet potato pie filling ..&lt;br /&gt;
spoon over nuts and brown sugar ..&lt;br /&gt;
bake for 65 min @ 350 deg F ..&lt;br /&gt;
&lt;br /&gt;
&lt;i&gt;( mine was done in 60 min )&lt;/i&gt;&lt;br /&gt;

.. the last batches are complete. Mom's Butter Cookies are traditional.. just not Christmas without them.&lt;br /&gt;

2/3 c sugar &lt;br /&gt;
1/2 lb. butter&lt;br /&gt;
2 unbeaten egg yolks&lt;br /&gt;

2 1/2 c. flour    / &lt;b&gt;gluten free&lt;/b&gt;     OR regular all-purpose if you don't need G.F.               &lt;br /&gt;

Cream sugar and  room-temp. butter (don't substitute anything else). &lt;br /&gt;
Stir in unbeaten egg yolks and vanilla.&lt;br /&gt;
Beat in all-purpose flour / &lt;b&gt;g&lt;/b&gt;luten &lt;b&gt;f&lt;/b&gt;ree and salt.&lt;br /&gt;
**&lt;br /&gt;
Heat oven to 350 deg.&lt;br /&gt;
Roll dough into  balls (about half-size of a walnut); put on cookie sheet; press center with thimble dipped in flour to make indentation.... fill with red raspberry preserves, mango, apricot... any type jam / preserves you like.&lt;br /&gt;
Bake about 10 to 15 min.(depends on your oven); bottom of cookies should just barely start to get light brown..&lt;br /&gt;
Makes: 5 doz. or more, depending on how big you make them.&lt;br /&gt;

&lt;b&gt;Gluten Free Irish Soda Bread&lt;/b&gt;&lt;br /&gt;
2 c. all purpose gluten free flour OR 2c. Bob's Red Mill Pizza Crust Mix [don't use the yeast packet]&lt;br /&gt;
1/2 t. salt&lt;br /&gt;
1 t. baking powder&lt;br /&gt;
1 t. cinnamon&lt;br /&gt;
1/2 t. nutmeg&lt;br /&gt;
1 T. honey or sugar&lt;br /&gt;
1 T. cold butter / /&lt;i&gt; I used coconut oil&lt;/i&gt;&lt;br /&gt;
1/2 c. currants or raisins&lt;br /&gt;
2 eggs&lt;br /&gt;
1 c. &lt;u&gt;minus&lt;/u&gt; 1 T. coconut milk &lt;br /&gt;
1 T. apple cider vinegar&lt;br /&gt;
1 T. mayonnaise  [ I &lt;i&gt;used plain yogurt &lt;/i&gt;]&lt;br /&gt;
&lt;br /&gt;
* 2 t.  baking soda *&lt;br /&gt;
Extra flour to shape loaf; milk to brush on loaf before baking.&lt;br /&gt;
&lt;br /&gt;
1. sift dry ingredients together &lt;b&gt; except not baking soda&lt;/b&gt;; place in medium bowl.&lt;br /&gt;
2. work in butter with hands; add currants&lt;br /&gt;
3. in a small bowl, add cider vinegar to milk and pour into dry ingredients.&lt;br /&gt;
4. add mayo, eggs and mix just until combined.&lt;br /&gt;
5. ADD &lt;b&gt;baking soda&lt;/b&gt; and mix just until combined.&lt;br /&gt;
6. dough is sticky; can put on gf floured board and shape into a round loaf [ or - dump it all out onto a parchment lined cookie sheet - wet your hands and shape it.]&lt;br /&gt;
7. score an "X" on top of loaf&lt;br /&gt;
8. brush with milk&lt;br /&gt;
9. bake at 375 degrees for 35-45min. or until Golden !&lt;br /&gt;
&lt;br /&gt;
This is good stuff !!!  Half the loaf is gone already!&lt;br /&gt;

Spicy Cranberry Chutney&lt;br /&gt;
&lt;br /&gt;
Need:  1/4 c. chopped dried apricots (snip with scissors)&lt;br /&gt;
       1/2 c. brown sugar - packed&lt;br /&gt;
       1/2 c. light raisins - the gold ones&lt;br /&gt;
       1 c. water&lt;br /&gt;
       3 c. fresh or frozen cranberries - rinsed&lt;br /&gt;
       1 Granny Smith apple - chopped&lt;br /&gt;
       1 tsp. lemon zest ( I used orange.. use what you have)&lt;br /&gt;
       1/4 c. lemon juice ( used a combination of lemon and lime )&lt;br /&gt;
       1/4 c. crystallized ginger - snip with scissors&lt;br /&gt;
       1/2 tsp. red pepper flakes&lt;br /&gt;
&lt;br /&gt;
In saucepan:&lt;br /&gt;
Bring to boil apricots, brown sugar, raisins and water. Reduce to simmer for  5 min.-- stirring occasionally.&lt;br /&gt;
&lt;br /&gt;
Stir in cranberries, apple, zest -- simmer about 10 min. more.&lt;br /&gt;
&lt;br /&gt;
Stir in lemon juice, ginger, red pepper flakes before removing from heat.  Mixture should be somewhat thick.&lt;br /&gt;
&lt;br /&gt;
Serve chilled over cream cheese block with crackers; as a side with turkey, chicken or pork.&lt;br /&gt;
&lt;br /&gt;
Recently tried it with cream cheese/Greek yogurt block -- oh, yes !!&lt;br /&gt;
