Chioggia (venezian. Cióxa) ist eine Hafenstadt an der Adria in der italienischen Region Venetien.
Die auf Holzpfählen errichtete Stadt liegt am Südende der Lagune von Venedig, etwa 25 Kilometer Seeweg von Venedig entfernt. Sie trägt wegen ihrer Ähnlichkeit mit der Metropolitanstadt den Beinamen „Klein-Venedig“. Chioggia ist über eine Steinbrücke mit dem Festland verbunden. Der Vena-Kanal teilt die Stadt und wird von neun Brücken gekreuzt.
Chioggia hat den größten Fischereihafen an der italienischen Adriaküste (gefolgt etwa neunzig Kilometer weiter südlich von Porto Garibaldi) und den größten Fischmarkt Italiens.

Über den Ursprung von Chioggia berichtet die Legende, dass Antenor, Aquil und Clodio, flüchtig aus dem Trojanischen Krieg, sich an der oberen Adriaküste niederließen. Aquil soll Aquileia, Antenor Padua und Clodio Clodia gegründet haben. Schon Plinius beschrieb die Hafenstadt Edron, die später Fossa Clodia genannt wurde. Der Name Clodia änderte sich im Laufe der Zeit zu Cluza und Clugia, um sich schließlich zu Chioggia zu wandeln. Erste Nennungen der Stadt sind in byzantinischen Schriften aus dem fünften Jahrhundert zu finden.

Pissouri is situated on a hill, more than 200 metres above sea level. A winding road leads down to Pissouri Bay, Here are some hotels and restaurants, that stay open in wintertime. The Kastro Restaurant is cosy and the food is really good.

KLOSTERHOf zur POST
Die gemeinsame Geschichte des Kloster Scheyern und des Klosterhof zur Post geht bis ins 11. Jahrhundert zurück, als Gräfin Haziga von Scheyern das Gebiet um Bayrischzell erschloss und dort ein Benediktinerkloster ansiedelte. Als erstes Wirtshaus in „Zell“ wurde 1751 der „Alte Wirth“ errichtet und 1877 durch die Eröffnung der ersten Poststation zum „Gasthof zur Post“ umbenannt.

Über 200 Jahre war die enge Beziehung von Bayrischzell und dem Kloster Scheyern aufgrund der Säkularisation (1803) unterbrochen, doch 2020 ging das Wirtshaus nun wieder in den Besitz des Klosters über und wurde zum “Klosterhof zur Post”.

Ochsenbäckchen (Ochsenbackerl) sind für ihren hohen Anteil an intermuskulärem Fett und Bindegewebe bekannt. Es handelt sich um ein sehr stark beanspruchtes Muskelgewebe, das von feinen Fettäderchen durchzogen ist.
Der Fettanteil sorgt dafür, dass das Fleisch nach langem Schmoren sehr zart wird und einen intensiven Geschmack entwickelt.
Neben Fett enthalten die Bäckchen viel Bindegewebe (Kollagen), das sich bei der langen Garzeit (meist 3–4 Stunden bei niedriger Temperatur) in Gelatine verwandelt. Das Fleisch ist in der Regel fein marmoriert.
Vor der Zubereitung wird das Fleisch meist „pariert“, das heißt, überschüssiges äußeres Fett, Sehnen und Silberhäute werden entfernt. Dennoch bleibt das innere Fett für die Zartheit erhalten.

Obwohl sie Fett und Bindegewebe enthalten, gelten geschmorte Ochsenbäckchen als Delikatesse, da das Fett ausschmilzt und das Fleisch butterweich wird.
