I finally did make it for dinner tonight.&lt;br /&gt;

It was an old recipe my late Mother had written on a note card and tucked away, so I finally had a chance to make it.  It's pretty hearty for a soup.  It turned out so well, I'm going to make it again for a church dinner I have this weekend.&lt;br /&gt;
&lt;br /&gt;
There is also a dish almost exactly like this called Norwegian Meatballs.  But, of course - I chose the Viking version.&lt;br /&gt;

It's the middle of winter and it's freezing outside, there's snow on the ground and it was sleeting last night when I made this.  I only made it because I wanted something different.  It's from an old recipe I've had for ages.&lt;br /&gt;
&lt;br /&gt;
It was originally called "Hungry Jack Beef And Bean Roundup," but I changed it.  The store didn't have any "Hungry Jack" bisuits in a can, so I got some other kind.  You cut the canned biscuits in half and line them around the edge of a baking pan.  Then you're supposed to mix hamburger and baked beans together for the middle and top it all off with shredded cheese.  I simply made a pot of chili and used that for the middle because I don't like baked beans.  I topped it with shredded cheese and then baked it like you see here.  It's an interesting dish to look at.&lt;/div&gt;</description>

Here's the backstory on this unique open-faced sandwich.&lt;br /&gt;
&lt;br /&gt;
The Leland Hotel was built in Springfield, Illinois in 1867 and sported 235 rooms.  In 1928, the hotel's chef, Joe Schweska, created the "Horseshoe Sandwich," which consisted of two pieces of toasted bread, sometimes Texas Toast, with hamburger patties on each piece of toast, covered with french fries and the whole thing smothered in cheese sauce.  It's a popular item on the menu of many restaurants around mid-Illinois to this day.&lt;br /&gt;
&lt;br /&gt;
Now, what I cooked is technically not a Horseshoe sandwich, but half of one, which is called a "Pony Shoe."  A horseshoe sandwich is a lot to eat and many people who can't each so much go with the half-sized Pony Shoe.  That's what I had tonight, and boy, was it delicious!  The fries must be deepfried and it has to be smothered in the cheese sauce for it to be authentic.&lt;br /&gt;

I served it over a bed of rice.&lt;br /&gt;
