Beef Stroganoff

This is what I made for dinner on Wednesday evening - beef stroganoff. Those noodles are called pappardelle wide noodles and it was the first time I'd ever used some of them. They really worked well in this dish!

This is what I made for dinner tonight - Mostaccioli Leonardo. I suspect that Leonard is a brand of pasta and that I clipped the recipe off a box of their Mostaccioli noodles.

Orecchiette pasta is shaped like little bowls with ridges on the bottoms. This was the first time I'd ever seen them or used them.

This is what I fixed for dinner last week - stir-fried noodles with marinated fish. It used the orecchiette pasta from the last picture. The fish was diced up into little pieces and don't show very well, but they're there.

This is what I made for dinner tonight - Potticotti. It may sound slightly familar because it's just a variation of manicotti. Instead of the usual filling inside the manicotti noodles, I make a filling out of potted meat, spices, grated parmesan cheese and an egg. Then I make your typical pasta sauce, pour over it and bake it until the shredded mozzarella cheese on top comes out golden brown. I invented this recipe because I alway thought potted meat got a bad rep a long time ago, while it could be jazzed up and become something for more "upscale" palates.

Although it's only one noodle, this is actually bigger than it looks. The plate is larger than normal size and the manicotti noodle really expanded after I had prepared it.

This is what I fixed for dinner tonight - chicken alfredo spaghetti. I had some chicken and wanted something different, so I used alfredo sauce instead of regular pasta sauce to pour over the spaghetti noodles, and chicken instead of meatballs.

I finally used the batch of ricotta cheese I had from making cheddar cheese a week or so ago. It went into this very yummy lasagna I made last night - with Italian sausage and three kinds of cheeses, including the ricotta.
